The tour was designed to reflect the social hierarchy of Vauban’s time.
You’ll begin your journey at the mill, a symbol of the foundation of the common people’s diet, where you’ll discover the vital importance of bread. As you wander through the exhibition, the flavors grow richer, moving from the simple sustenance of shared bread—paired with wine as it was drunk in those days—to the hearty flavors of a meat pie, evoking the bustling streets and taverns that once brought the stronghold to life. Little by little, the dishes grow more refined: eggs delicately seasoned with herbs herald the evolution of tastes, before giving way to the freshness of a lemon sorbet, prized at the most elegant tables. Finally, the journey concludes in the Vauban Garden, with a touch of sweetness and splendor, where fruit tarts, sugared almonds, and candied fruits celebrate the taste of sugar—a symbol of prestige and pleasure at the table of the Grand Siècle.
Throughout the evening, the tasting — led by Eva from Le Calice Enchanté— will also be interspersed with historical anecdotes about the dietary habits of the time, shared by a cultural guide from the Citadel. This unique approach offers a fresh way to rediscover the monument, its ramparts, and its garden through a sensory and convivial lens.
